Winemaking: The Cellar

Being able to count on a structure that is well adapted to the needs of winemaking and wine aging is critical. In addition to having built a building specifically for winemaking, Domaine de Cawood uses state-of-the-art equipment, including temperature-regulated stainless-steel tanks, which allow smooth transitions to hot and cold.

Note that the Régie des alcools des courses et des jeux (RACJ) ensures that the cellar and its equipment are inspected so that it complies with the cleanliness and sanitation criteria used in the food service industry.
